Geographically, North America starts where Central America ends, at the border between Mexico and Guatemala. By this definition North America include the USA, Mexico and Canada, and as you can imagine most North American coffee is going to be from the milder climates of Mexico. Very little coffee is produced in the USA (Southern California has some emerging coffee farming projects), we admit to fudging this category and including Hawaii too, though it is not in North America! As for Mexico, it is a well-established coffee producer with a specialization in cooperative coffee groups and organic certified lots. We receive the majority of fine Mexican coffee from the Southernmost region of Chiapas, but we will have Oaxaca and other regional coffees too.
