My lightest City roast presented a delicate citrus note in fragrance, outlined by raw brown sugar sweetness, and a hint of malted grains. After pouring hot water on the grounds, the crust has a honey-sweet scent to it, though it acts as a barrier to some of the delicate aromatics. Running a spoon through the crust released fragrant accents of steeped black tea, lemon peel, and spice. The cup is sweet and dynamic in the City to City+ roasts, whereas we found Full City roasts to be a bit flatter, and bittersweet. City roasts start off sweetly balanced, and finish that way too. As the coffee cools, the top end of the cup is enlivened with aromatic attributes typical of the Java variety. Subtle top note accents of black tea, green apple, and lemongrass are found amidst the balanced core coffee flavors of brown sugar, and cocoa. The cup has lasting sweetness and impressive clarity. Origin & Farm Notes

This Java cultivar separation is a blend from a few different coffee estates in Antigua. These farms are managed by the Zelaya family, whose coffees we've been buying for more than 15 years now. Farms like Cabrejo, Pavon, and Pulcal, these are old coffee estates overlooking the colonial city of Antigua. Along with Bourbon, Caturra, and Typica, each of these coffee estates has small plots of Java variety planted as well. The production numbers from each is quite small, so blending them together into one sizable lot makes a lot of sense. This year's blend is still just 2400 pounds. This region is said to have a unique micro-climate in the Antigua valley, as well as hillside exposure and well-draining soils.  This is a separation of the Java cultivar, known for it's elongated, narrow shape (a little like Gesha that way) and often presenting tea-like and spiced top notes as well as moderate acidity.
