Pango Pango offers much of what we think of as classic wet hulled flavors, herbaceous and earthy, balanced out by low toned intensity, and even a touch of acidity at the lighter end of the roast spectrum. There's an herbal hint to the sweetness in the ground coffee, rustic sugars accented by fresh basil, with baking cocoa and roast intensity behind it. The wet aroma draws out some sugar browning notes, pungent, like burnt sugar, with sharp cocoa adding to the impact. There's also an accent of spice, with a savory note that reminded me of cardamom cookie. In the cup, complex rustic notes comes through, earthy accents of foresty spices, and fresh cut wood that are most intense at City+. We picked up on positive acidic notes at that roast level too, grabby and bittering like grapefruit peel. Our Full City+ roast was marked by indelible dark cocoa flavors, baking chocolate that's been lightly sweetened, intense roast tones that lead to a long bittersweet finish. Acidity is flat in dark roasts, and body is so dense and thick, pleasant on the palate. This makes excellent SO ("single origin") Indonesian espresso too, and no brainer for milk drinks. My FC+ roast pulled at 18g in/18g out was so syrupy and thick, the perfect texture to impress low toned flavors on the tongue, like sharp cacao, flourless chocolate torte, and lingering smokey bittersweets.

Origin & Farm Notes

Sulawesi Pango Pango comes to us from a collector in South Sulawesi named Eko who processes specialty coffee for local roasters and export. We actually first met Eko in Java, where he was born and raised, and where he started in coffee. However, a few years back, Eko met and married a women from Toraja which would lead to him relocating his coffee operation. This lot is from farms in Pango Pango, South Sulawesi, where altitude reaches around 1700 meters. It's a wet hulled coffee, also known as "Giling Basah", which you can read more about here. This is the traditional process in a lot of Indonesian countries, and perhaps associated most closely with Sumatra. The green coffee is pretty dark in color compared to wet process and tends to have a higher allowance for physical defects due to the way it's handled. The cup is very rustic, with earth-toned flavors, lower acidity, and dark bittersweet flavors.
