Washed Timor's hold such an interesting place within the flavor palette of Indonesian coffee. Most coffee from East Timor are wet-processed, and tend to tick off the boxes of more crowd pleasing type coffee flavors, much like a versatile Latin American coffee. This small producer blend from Aifu region offers just that, with broad chocolatey low tones, mild sweetness, and just a hint of acidity. City+ roasts smells of unrefined sweetness, like molasses, with some rustic complexity, and bittersweet cocoa. The molasses flavor comes through in the cup as well, along with notes of sorghum and corn syrups. The cup has a mild fruit accent that fades to some earthy notes of tobacco and roasted barley in the aftertaste. It's a fairly low acid coffee too, capable of developing robust chocolate roast flavors with dark roasting. Both tend to be qualifiers for espresso and milk drinks!

This wet process coffee was purchased from a milling operation located in Ermera District of East Timor ("Timor Leste"). More specifically, this particular lot is made up of coffees from small coffee producers in the nearby region of Aifu, within Ermera. The farms in this area can reach as high as 1700 meters above sea level, and the typical varieties cultivated are Timor Hybrid types and Typica. Most of the coffee processed in Timor is wet process, where fermentation is used to remove much of the coffee fruit, the coffee laid to dry in its protective parchment layer. We found this lot expressed pleasantly bittersweet cup profile that's well suited for middle roasts, on up to 2nd Crack. It's the kind of coffee that pairs very well with milk, and qualifies for espresso too.
